Instructions
- Heat 1 tbsp of olive oil in a large skillet over medium-high heat. Add the chicken thighs and cook until browned on both sides, about 5-7 minutes per side. Remove the chicken from the skillet and set aside.
- Add the remaining olive oil to the skillet and sauté the onion and garlic until softened, about 2-3 minutes.
- Add the bell peppers and continue to sauté for another 5-7 minutes until they are slightly softened.
- Add the diced tomatoes, tomato paste, paprika, cumin, cayenne pepper, chicken broth, and salt and pepper to taste. Stir to combine.
- Return the chicken to the skillet and spoon some of the sauce over the top of the chicken.
- Cover the skillet and let simmer for 20-25 minutes or until the chicken is fully cooked and the sauce has thickened.
- Serve hot with rice or crusty bread.
