  • 1 tsp paprika

  • 1/2 tsp cayenne pepper
  • 1/2 cup chicken broth
  • Salt and pepper to taste
  • 2 tbsp olive oil

Instructions

  1. Heat 1 tbsp of olive oil in a large skillet over medium-high heat. Add the chicken thighs and cook until browned on both sides, about 5-7 minutes per side. Remove the chicken from the skillet and set aside.
  2. Add the remaining olive oil to the skillet and sauté the onion and garlic until softened, about 2-3 minutes.
  3. Add the bell peppers and continue to sauté for another 5-7 minutes until they are slightly softened.
  4. Add the diced tomatoes, tomato paste, paprika, cumin, cayenne pepper, chicken broth, and salt and pepper to taste. Stir to combine.
  5. Return the chicken to the skillet and spoon some of the sauce over the top of the chicken.
  6. Cover the skillet and let simmer for 20-25 minutes or until the chicken is fully cooked and the sauce has thickened.
  7. Serve hot with rice or crusty bread.
