Our Homemade Blueberry Muffin Recipe: A Flavorful Delight

Muffins are a delicious and easy breakfast treat that can be made with a variety of ingredients. One of my favorite muffin flavors is blueberry, and I have a recipe that I’d like to share with you today. But first, let me tell you a little story.

When I was a kid, my mom used to take me blueberry picking every summer. We would spend hours in the hot sun, picking berries and snacking on them as we went. When we got home, we would make all sorts of blueberry treats, including blueberry muffin. This recipe is a nod to those sweet childhood memories.

My muffins are not only delicious but also good for your health. They are made with nutritious ingredients such as protein-rich eggs, and antioxidant-packed blueberries. These muffins are an excellent source of fiber, vitamins, and essential minerals, making them a healthy choice for a snack or a balanced breakfast.

Duration: 35 mins

Difficulty: Easy

Budget: Affordable

Serving size: 12 muffins

Calories: 110 kcals / person

Ingredients

  • 2 cups (240g) all-purpose flour
  • 2 tsp (30g) honey (adjust according to your taste)
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 2 large eggs
  • 1/2 cup (120ml) milk
  • 1/2 cup (120ml) vegetable oil
  • 1 cup fresh (150g) or frozen blueberries

Instructions

  • Preheat your oven: Set your oven to 375°F (190°C) and let it preheat while you prepare the muffin batter.
  • Grease a muffin tin: Grease a 12-cup muffin tin using a non-stick cooking spray or by brushing each cup with some oil. This will help prevent the muffins from sticking to the pan.
  • Whisk together the dry ingredients: In a large mixing bowl, whisk together the flour, honey, baking powder, and salt until well combined. Make sure there are no lumps.
  • Mix the wet ingredients: In a separate bowl, beat the eggs with the milk and oil until the mixture is smooth.
  • Combine the wet and dry ingredients: Add the wet ingredients to the dry ingredients and stir gently until the ingredients are just combined. Do not overmix the batter as it can make the muffins tough.
  • Add blueberries: Fold in the blueberries gently using a spatula until they are evenly distributed throughout the batter.
  • Fill the muffin tin: Using a spoon or a cookie scoop, fill each muffin cup about two-thirds full with the batter.
  • Bake the muffins: Place the muffin tin in the preheated oven and bake for 20-25 minutes, or until a toothpick inserted into the center of a muffin comes out clean. Check the muffins after 20 minutes to ensure they are not overbaked.
  • Cool the muffins: Once the muffins are done, remove the muffin tin from the oven and let it cool for a few minutes. Then, transfer the muffins to a wire rack to cool completely before serving.

Tips

  • If using frozen blueberries, be sure to thaw them completely before adding them to the batter.
  • For extra flavor, you can add a teaspoon of vanilla extract to the wet ingredients.
  • These muffins freeze well, so you can make a big batch and store them in an airtight container for up to three months.

These blueberry muffins are a great way to start your day. They’re easy to make, delicious, and filled with sweet blueberries. Give this recipe a try and see how much you love it!
