Instructions

  1. Preheat your oven to 180°C (350°F).
  2. In a large mixing bowl, whisk together the eggs and sugar until the mixture becomes pale and thick, about 3-5 minutes.
  3. Sift the flour and baking powder into the bowl with the egg mixture and mix until just combined.
  4. Using a spatula, fold the flour mixture into the egg mixture, making sure to fully incorporate all the ingredients. Be gentle and do not overmix, as this can result in tough madeleines.
