  • 1 1/4 tsp salt
  • 1/4 cup (60ml) warm water
  • 1/4 cup (60ml) whole milk
  • 2 1/4 tsp active dry yeast
  • 1 1/4 cups (285g) unsalted butter, chilled
  • 1 large egg, beaten

Instructions

  1. In a large mixing bowl, whisk together the flour, sugar, and salt.
  2. In a separate bowl, mix together the warm water, whole milk, and yeast. Let the mixture sit for a few minutes until the yeast is activated and foamy.
  3. Pour the yeast mixture into the bowl with the flour mixture and stir until a dough forms.
  4. Knead the dough on a lightly floured surface for about 5 minutes, until it becomes smooth and elastic.
  5. Place the dough in a greased bowl, cover it with plastic wrap, and let it rise in a warm place for about 1 hour, until it has doubled in size.
  6. Meanwhile, cut the chilled butter into thin slices and place them on a sheet of parchment paper. Cover the butter with another sheet of parchment paper and use a rolling pin to pound the butter into a flat, even layer.
  7. Roll out the dough on a floured surface into a large rectangle, about 1/4 inch thick.
  8. Place the flattened butter on top of the dough, covering about two-thirds of the surface.
  9. Fold the dough over the butter, like a letter, so that the butter is enclosed in the dough.
  10. Roll out the dough again, into another large rectangle, and fold it into thirds again.
  11. Repeat this process two more times, rolling and folding the dough each time.
  12. Wrap the dough in plastic wrap and refrigerate it for at least 1 hour, or overnight.
  13. Preheat the oven to 400°F (200°C).
  14. Roll out the chilled dough on a floured surface into a large rectangle, about 1/4 inch thick.
  15. Cut the dough into triangles, about 5 inches wide at the base.
  16. Roll up each triangle, starting from the base, and tucking in the ends to create a crescent shape.
  17. Place the croissants on a baking sheet lined with parchment paper.
  18. Brush the croissants with the beaten egg.
  19. Bake the croissants for 15-20 minutes, until golden brown and flaky.
  20. Serve warm with butter and jam, or enjoy them as they are.

In total, making homemade croissants with these ingredients will take around 4-8 hours, depending on the specific recipe and resting times.
