Ingredients

  •  3 lobsters (about 1 1/2 lb. each)
  •  10 black peppercorns
  •  1 bay leaf
  •  1½ tsp. fine sea salt, divided
  •  4 split-top buns, such as hot dog buns
  •  1 stick (4 oz.) unsalted butter
  •  Sweet paprika
  •  8 medium leaves of bibb, butter, or Boston lettuce
  •  Finely chopped fresh chives, for garnish

Instructions

Step 1:

  1. Fill a large pot with enough water to reach about 1 inch up the sides of the pan.
  2. Add black peppercorns, bay leaf, and 1 teaspoon of sea salt to the pot, and bring it to a boil.
  3. Add lobsters to the pot and quickly cover it.
  4. Cook until the shells of the lobsters turn bright red and the meat is just cooked through, approximately 8 minutes.

Step 2:

  1. Remove the lobsters from the pot and let them cool slightly.
  2. Crack open the claws, tails, and knuckles, and remove the meat.
  3. Rinse the lobster meat under warm water as needed to remove any impurities.
  4. Cut the lobster meat into 1-inch pieces and set aside. You can discard the carapaces and shells or save them for stock.

Step 3:

  1. Heat a large griddle or cast iron skillet over medium heat.
  2. Spread ½ tablespoon of butter on the cooking surface to thinly coat it.
  3. Add the buns to the griddle or skillet and cook, turning occasionally, until all sides are lightly toasted, about 4 minutes.

Step 4:

  1. In a small pot, melt the remaining butter.
  2. Stir in ½ teaspoon of sea salt and a generous pinch of paprika.
  3. Turn off the heat and add the reserved lobster meat to the pot, stirring to coat the meat with the butter mixture.

Step 5:

  1. Line each of the buns with two lettuce leaves.
  2. Spoon the lobster meat among the prepared buns.
  3. Top with more paprika to taste and garnish generously with chives.
  4. Serve the lobster rolls warm.

Tips

  1. Choose fresh, high-quality lobster meat: The fresher the lobster, the better the taste. If possible, buy live lobsters and cook them yourself. Otherwise, opt for fresh or frozen lobster meat from a reputable seafood market.
  2. Don’t overcook the lobster: Lobster meat can become tough and rubbery if overcooked. Cook the lobsters until the shells turn bright red and the meat is just cooked through, about 8 minutes.
  3. Toast the buns: Toasting the buns adds a nice crispy texture and enhances the flavor. Use a griddle or cast iron skillet to toast the buns with a little butter until they are lightly browned.
